garlic oil schezwan peanut noodles

Ingredients
- 1/2 c. sesame or peanut oil
- 1/4 c. green onions or scallions sliced
- 3-4 ct. cloves garlic grated
- 1 Tbsp. grated ginger
- chili flakes, or Korean chili flakes
- 1/4 c. chopped fresh cilantro
- 4 squares brown rice ramen noodles or 6 ounces rice noodles
- 1/3 c. tamari or soy sauce
- 1/4 c. creamy peanut butter
- 3 Tbsp. tahini
- 2 tsp. honey or maple
- 1/3 c. chopped peanuts
Directions
- in a skillet over medium heat, cook until fragrant (3-5 min):
- 1/2 c. sesame oil
- 1/4 c. green onions
- in a large bowl, mix:
- 3-4 ct. grated garlic
- 1 Tbsp. grated ginger
- 1/4 c. chopped cilantro
- chili flakes.
- pour the hot oil over top the garlic herb mix.
- let sit 3-5 minutes
- whisk in:
- 1/3 c. tamari
- 1/4 c. peanut butter
- 3 Tbsp. tahini
- 2 tsp. honey
- cook the noodles according to package directions, then drain.
- toss the warm noodles with the oil.
- serve the noodles with:
- green onion
- cilantro
- peanuts
