Ingredients

  • ½lb. ground chicken or tofu pieces
  • 1 shallot -or- ½ red onion 6 green onion stems chopped
  • 1.5 Tbsp. ginger
  • ½ cabbage
  • 1 pinch of chinese 5 spice
  • 1 teaspoon sriracha sauce
  • 2 grated carrots -or- ½ sweet potato
  • 1-2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 package circular pot sticker wrappers
  • 1 egg
  • 2 tbsp Mirin

Directions

filling

  1. cook ground chicken in pan however you like to cook ground chicken, about 75-80% of the way. set aside, you’ll want it later
  2. after the chicken is set aside, sauté shallot until translucent, then add cabbage and carrots or sweet potatoes, sauté until they are 75-80% done (they will cook more once the dumpling is cooking)
  3. add a pinch of 5 spice, the ginger, the sriracha sauce, rice wine vinegar and soy sauce, sauté for 2 more minutes.

now time to spend some quality time together on the pot sticker production line:

  1. beat one egg and put it in a small bowl
  2. lay out the pot sticker wrappers and put egg around the rim of the pot sticker (so it sticks once you add filling)
  3. put 1.5 teaspoons (maybe more, maybe less idk, i’m mainly guessing), in the filling of the pot sticker, then fold the edges together and squeeze.

cooking

  1. first cook pot stickers in oil on both sides, then
  2. add 1/8 cup water, a tablespoon of rice wine vinegar, and a tablespoon of mirin (this really makes it special!). Cover and let steam for 2 minutes.
  3. put cooked pot stickers on a plate and then keep going with the rest!
