Ingredients

  • scale
  • jar of starter
  • stir stick
  • 50 g. flour
  • 50 g. water

Directions

  • remove and discard enough starter to leave 50 g. left over.
    • make pancakes with the discard.
  • add equal parts by weight of flour and water (50 g. starter, 50 g. water, 50 g. flour) to the remaining starter.
  • mix until uniform
  • cover and let sit at room temperature for daily feedings, fridge for weekly.
